Technical sheet detail: Technological card for the production of white-rind Caciotta goat cheese

it describes the technology for the production of goat cheese at presamic curdling, with introduction of Penicillium candidum mould, which causes the growth of white mould on the rind (from which the name). This technology was pinted out by the researchers of the CRA-ZOE more than one decade ago, when it was still called ISZ.
