The Department operates in all segments of the agro-industrial product transformation. With regard to the food sector, the research focus on basic production chains such as: grapevines-wine, olives-oil, fodder-zootechnics-milk-cheese. Attention is reserved for quality testing in food-product transformation and sustainable agriculture.

With regard to the non-food sector, the research activities focus on production, transformation, and optimization of various plant species (also for biomass production), as well as on the potential for using some plants as “biofactories”. This facilitates studies on the possibility of using bioactive substances of plant origin (including anti-carcinogens) for pharmacological use, or in protecting other plants through eco-compatible methods.

Le principali attività di ricerca e sperimentazione:

  • gathering, characterizing, and maintaining germplasm including over 1,000 entries regarding native varieties, old varieties, and new cultivars; optimizing germplasm as a source of useful elements in genetic improvement programs (especially in reference to grapevines and olive trees);

  • cultivation and anti-disease techniques for sustainable production and the gathering of products (grape-wine, olive-oil) free of residue/contaminants;

  • improving techniques in harvesting, logistics, and preservation in order to prolong the products’ shelf-life (e.g. table grapes);

  • improving technology in oil extraction and the transformation of table olives;

  • integrated studies on aspects of fodder production, animal nutrition, methods in raising dairy cattle, technology in transforming milk and milk derivatives (improving microflora involved in fermentation processes for quality standards, food safety, and product diversification);

  • studying and improving species used for renewable energy (grasses, shrubs and trees), as well as logistics and storing technology (biomass);

  • studying species, with regard to fiber, cellulose, sugar, starch, protein, oil, aromatic essences, and pharmaceutical properties;

  • new plant varieties with increased focus on the synthesis and collection of products for industrial use (biofactory purposes) through traditional and advanced genetic improvement;

  • new strategies in fighting against phytopathologies, mainly based on bioactive plants, with a reduction or full elimination of chemical substances;
